Ingredients

  • 2 large zucchinis (about 10 ounce (283 g) s each)
  • 2 tablespoon (30 ml) s extra-virgin olive oil
  • 1 tablespoon (15 ml) finely chopped fresh rosemary, plus more for garnish
  • 1 teaspoon (5 ml) onion powder
  • 1/2 teaspoon (3 ml) garlic powder
  • 3/4 cup (180 ml) shredded low-moisture part-skim mozzarella cheese
  • 2 ounce (57 g) s feta cheese in brine, drained and crumbled (about 1/2 cup (120 ml))
  • 1 tablespoon (15 ml) hot honey


Instructions

  1. Set your oven to 450°F. Cut the zucchinis diagonally into 24 slices, each 1/2 inch thick, and place them in a big bowl. Add extra-virgin olive oil, finely chopped rosemary, onion powder, and garlic powder; mix until the zucchini is thoroughly coated. Lay them out flat on a large baking sheet with raised edges. Cook in the oven until they are almost soft, around 5 minutes.
  2. At the same time, combine the shredded mozzarella and crumbled feta in a small bowl. Take the zucchini out of the oven, turn the slices over, and sprinkle the cheese mixture on top.
  3. Adjust the oven setting to broil. Broil the zucchini until the cheese becomes golden and bubbly, which should take about 3 minutes. Pour hot honey over the top and, if you like, add extra rosemary for decoration.

Notes

  • For a more robust flavor, mix Parmesan, Gouda, mozzarella, and feta cheeses.
  • Add a dash of red pepper flakes for a spicy twist to the zucchini.
  • Enhance the dish by topping with cooked bacon or grilled chicken before broiling.
