Ingredients
- 2 large zucchinis (about 10 ounce (283 g) s each)
- 2 tablespoon (30 ml) s extra-virgin olive oil
- 1 tablespoon (15 ml) finely chopped fresh rosemary, plus more for garnish
- 1 teaspoon (5 ml) onion powder
- 1/2 teaspoon (3 ml) garlic powder
- 3/4 cup (180 ml) shredded low-moisture part-skim mozzarella cheese
- 2 ounce (57 g) s feta cheese in brine, drained and crumbled (about 1/2 cup (120 ml))
- 1 tablespoon (15 ml) hot honey
Instructions
- Set your oven to 450°F. Cut the zucchinis diagonally into 24 slices, each 1/2 inch thick, and place them in a big bowl. Add extra-virgin olive oil, finely chopped rosemary, onion powder, and garlic powder; mix until the zucchini is thoroughly coated. Lay them out flat on a large baking sheet with raised edges. Cook in the oven until they are almost soft, around 5 minutes.
- At the same time, combine the shredded mozzarella and crumbled feta in a small bowl. Take the zucchini out of the oven, turn the slices over, and sprinkle the cheese mixture on top.
- Adjust the oven setting to broil. Broil the zucchini until the cheese becomes golden and bubbly, which should take about 3 minutes. Pour hot honey over the top and, if you like, add extra rosemary for decoration.
Notes
- For a more robust flavor, mix Parmesan, Gouda, mozzarella, and feta cheeses.
- Add a dash of red pepper flakes for a spicy twist to the zucchini.
