Ingredients
- 2 large zucchini, grated (about 4 cup (960 ml) s), well-drained
- 1/2 small white or yellow onion, grated, drained of liquid
- 2 teaspoon (10 ml) s garlic, minced
- 1/2 cup (56.5 g) white cheddar cheese, shredded
- 2 large eggs, room temperature, beaten
- 2 cups (250 g) all-purpose flour
- 1 teaspoon (5 ml) kosher salt
- 1/2 teaspoon (3 ml) freshly ground black pepper
- 1 cup (113 g) mozzarella cheese, shredded
- 1/4 cup (25 g) plant-based parmesan cheese, grated
- 1/2 teaspoon (3 ml) Italian seasoning (or up to a teaspoon)
- 1/2 teaspoon (3 ml) parsley, finely chopped for garnish (optional )
- Marinara sauce, for dipping
Instructions
- Set your oven to a temperature of 450°F and prepare an 11×17-inch baking tray by covering it with parchment paper.
- Wash the zucchini, cut off one end, and use a grater to shred it.
- To remove excess moisture, wrap the shredded zucchini in a cheesecloth or paper towel and squeeze tightly to drain the water.
- Place the zucchini that has been drained into a big mixing bowl.
- Into the bowl with the zucchini, add the onion, garlic, white cheddar, eggs, flour, salt, and pepper. Stir until everything is combined.
- Using a spatula, spread the mixture evenly onto the prepared baking sheet, ensuring the layer is no thicker than ½ inch.
- Put it into the oven and bake for about 30 minutes until the edges turn golden.
- Take it out of the oven and reduce the oven’s temperature to 425°F.
- Carefully turn the zucchini sticks over. Use a spatula to loosen the edges first, then place another piece of parchment paper on top and cover with another 11×17-inch pan. Hold both pans together and flip them over carefully, or use a couple of spatulas to gently turn the sticks on the same tray.
- Sprinkle shredded mozzarella, plant-based parmesan, and Italian seasoning on top.
- Continue baking for 15 more minutes until the cheese is melted, and the crust becomes crispy.
- Slice into strips, optionally garnish with parsley, and enjoy warm with some marinara sauce for dipping.
