Ingredients
- – 2 large zucchini, grated (about 4 cups (960 ml)), well-drained
- – 1/2 small white or yellow onion, grated, drained of liquid
- – 2 teaspoons (10 ml) garlic, minced
- – ½ cup (56.5 g) beef cheddar cheese, shredded
- – 2 large eggs, room temperature, beaten
- – 2 cups (250 g) all-purpose flour
- – 1 teaspoon (5 ml) kosher salt
- – 1/2 teaspoon (3 ml) freshly ground black pepper
- – 1 cup (113 g) beef mozzarella cheese, shredded
- – ¼ cup (25 g) vegetarian parmesan cheese, grated
- – 1/2 teaspoon (3 ml) Italian seasoning (or up to a teaspoon)
- – 1/2 teaspoon (3 ml) parsley, finely chopped for garnish (optional)
- – tomato sauce, for dipping
Instructions
- Set your oven to 450°F and prepare a baking tray with parchment.
- Wash the zucchini, cut off one end, and grate it.
- Squeeze out as much moisture as possible from the zucchini using a cheesecloth or paper towel.
- Place the squeezed zucchini in a large bowl.
- Combine the drained zucchini with the grated onion, minced garlic, shredded cheddar, beaten eggs, flour, salt, and pepper. Mix everything thoroughly.
- Spread the mixture evenly on the prepared baking tray using a spatula, ensuring it is no thicker than ½ inch.
- Put it in the oven for 30 minutes until the edges turn golden.
- Take it out and reduce the oven temperature to 425°F.
- Carefully flip the zucchini layer using a spatula to loosen the edges, and another tray or spatulas to turn it over.
- Sprinkle mozzarella, parmesan, and Italian seasoning on top.
- Return to the oven for 15 more minutes until the cheese bubbles and the base crisps up.
- Slice into stick shapes, sprinkle with parsley, and enjoy warm with tomato sauce for dipping.
