Ingredients

  • 2 medium zucchinis, sliced (about 1 pound (454 g)) (450 grams)
  • 2 medium yellow summer squashes, sliced (about 1 pound (454 g)) (450 grams)
  • 1 tablespoon olive oil (15 ml)
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 cup (240 ml) shredded cheddar cheese (about 4 ounces (113 g)) (115 grams)
  • 1 cup (240 ml) shredded mozzarella cheese (about 4 ounces (113 g)) (115 grams)
  • 1/2 cup (120 ml) grated vegan cheese (about 1.5 ounces (43 g)) (45 grams)
  • 1 cup (240 ml) breadcrumbs (about 4 ounces (113 g)) (115 grams)
  • 2 tablespoons (30 ml) vegetable oil, melted (30 grams)
  • 1 teaspoon (5 ml) dried Italian herbs (5 grams)
  • Salt, to taste
  • Black pepper, to taste


Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Slice the zucchinis and yellow summer squashes into thin rounds.
  3. Heat olive oil in a large skillet over medium heat.
  4. Add the chopped onion and cook until softened, about 5 minutes.
  5. Add minced garlic to the skillet and sauté for another 1-2 minutes until fragrant.
  6. Add the sliced zucchinis and summer squashes to the skillet.
  7. Cook the vegetables until just tender, about 5-7 minutes.
  8. Season the vegetables with salt and black pepper to taste.
  9. In a large mixing bowl, combine cheddar cheese, mozzarella cheese, and Parmesan cheese.
  10. Add the cooked vegetables to the cheese mixture and stir to combine.
  11. Transfer the vegetable and cheese mixture to a greased casserole dish.
  12. In a small bowl, mix breadcrumbs with melted butter and dried Italian herbs.
  13. Sprinkle the breadcrumb mixture evenly over the casserole.
  14. Bake in the preheated oven for 25-30 minutes until the top is golden brown and bubbly.
  15. Remove from the oven and let it cool for a few minutes before serving.
