Ingredients
- 2 medium zucchinis, sliced (about 1 pound (454 g)) (450 grams)

- 1 tablespoon olive oil (15 ml)
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 cup (240 ml) shredded cheddar cheese (about 4 ounces (113 g)) (115 grams)
- 1 cup (240 ml) shredded mozzarella cheese (about 4 ounces (113 g)) (115 grams)
- 1/2 cup (120 ml) grated vegan cheese (about 1.5 ounces (43 g)) (45 grams)
- 1 cup (240 ml) breadcrumbs (about 4 ounces (113 g)) (115 grams)
- 2 tablespoons (30 ml) vegetable oil, melted (30 grams)
- 1 teaspoon (5 ml) dried Italian herbs (5 grams)
- Salt, to taste
- Black pepper, to taste
Instructions
- Preheat the oven to 375°F (190°C).
- Slice the zucchinis and yellow summer squashes into thin rounds.
- Heat olive oil in a large skillet over medium heat.
- Add the chopped onion and cook until softened, about 5 minutes.
- Add minced garlic to the skillet and sauté for another 1-2 minutes until fragrant.
- Add the sliced zucchinis and summer squashes to the skillet.
- Cook the vegetables until just tender, about 5-7 minutes.
- Season the vegetables with salt and black pepper to taste.
- In a large mixing bowl, combine cheddar cheese, mozzarella cheese, and Parmesan cheese.
- Add the cooked vegetables to the cheese mixture and stir to combine.
- Transfer the vegetable and cheese mixture to a greased casserole dish.
- In a small bowl, mix breadcrumbs with melted butter and dried Italian herbs.
- Sprinkle the breadcrumb mixture evenly over the casserole.
- Bake in the preheated oven for 25-30 minutes until the top is golden brown and bubbly.
- Remove from the oven and let it cool for a few minutes before serving.
