Ingredients
- 2 cups leftover mashed potatoes
- 1 cup shredded cheese (cheddar or mozzarella)
- 1/4 cup grated Parmesan cheese
- 1/4 cup sour cream
- 1/4 cup chopped green onions
- 1 egg
- 1/2 teaspoon garlic powder
- Salt and pepper to taste
- Breadcrumbs for coating
- Oil for baking
Instructions
- Preheat the oven to 400°F (200°C).
- In a large bowl, combine the mashed potatoes, shredded cheese, Parmesan cheese, sour cream, green onions, egg, garlic powder, salt, and pepper. Mix well until combined.
- Using your hands, form the mixture into small balls or puffs.
- Roll each puff in breadcrumbs to coat.
- Place the puffs on a greased baking sheet.
- Lightly spray or drizzle oil over the puffs for crispiness.
- Bake in the preheated oven for 20-25 minutes or until golden brown.
