Description

Delicious cheesy mashed potato puffs made from leftover mashed potatoes, creating a crispy exterior and fluffy center, perfect as a side dish or appetizer.


Ingredients

  • 2 cups leftover mashed potatoes
  • 1 cup shredded cheese (cheddar or mozzarella)
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup sour cream
  • 1/4 cup chopped green onions
  • 1 egg
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • Breadcrumbs for coating
  • Oil for baking


Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, combine the mashed potatoes, shredded cheese, Parmesan cheese, sour cream, green onions, egg, garlic powder, salt, and pepper. Mix well until combined.
  3. Using your hands, form the mixture into small balls or puffs.
  4. Roll each puff in breadcrumbs to coat.
  5. Place the puffs on a greased baking sheet.
  6. Lightly spray or drizzle oil over the puffs for crispiness.
  7. Bake in the preheated oven for 20-25 minutes or until golden brown.
