Ingredients
- 2 tablespoons (30 ml) vegetable oil (28 grams)
- 1 medium onion, diced
- 2 cloves garlic, minced
- 4 cups (960 ml) beef broth (960 milliliters)
- 3 cups (720 ml) frozen hash brown potatoes (450 grams)
- 1 cup (240 ml) shredded cheddar cheese (115 grams)
- 1 cup (240 ml) milk (240 milliliters)
- 1/2 cup (120 ml) Greek yogurt (120 grams)
- Salt, to taste
- Black pepper, to taste
- 2 green onions, sliced
- 1/2 cup (120 ml) cooked beef, diced (optional) (75 grams)
Instructions
- Melt 2 tablespoons of unsalted butter in a large pot over medium heat.
- Add 1 diced medium onion to the pot and sauté until translucent.
- Stir in 2 cloves of minced garlic and cook for 1 minute.
- Pour in 4 cups of chicken broth and bring to a simmer.
- Add 3 cups of frozen hash brown potatoes to the pot.
- Cook for 10-15 minutes until potatoes are tender.
- Stir in 1 cup of shredded cheddar cheese until melted.
- Pour in 1 cup of milk and mix well.
- Add 1/2 cup of sour cream and stir until combined.
- Season with salt and black pepper to taste.
- Add 1/2 cup of diced cooked chicken, if using.
- Simmer for an additional 5 minutes.
- Garnish with sliced green onions before serving.
