Ingredients

  • 2 tablespoons (30 ml) vegetable oil (28 grams)
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 4 cups (960 ml) beef broth (960 milliliters)
  • 3 cups (720 ml) frozen hash brown potatoes (450 grams)
  • 1 cup (240 ml) shredded cheddar cheese (115 grams)
  • 1 cup (240 ml) milk (240 milliliters)
  • 1/2 cup (120 ml) Greek yogurt (120 grams)
  • Salt, to taste
  • Black pepper, to taste
  • 2 green onions, sliced
  • 1/2 cup (120 ml) cooked beef, diced (optional) (75 grams)


Instructions

  1. Melt 2 tablespoons of unsalted butter in a large pot over medium heat.
  2. Add 1 diced medium onion to the pot and sauté until translucent.
  3. Stir in 2 cloves of minced garlic and cook for 1 minute.
  4. Pour in 4 cups of chicken broth and bring to a simmer.
  5. Add 3 cups of frozen hash brown potatoes to the pot.
  6. Cook for 10-15 minutes until potatoes are tender.
  7. Stir in 1 cup of shredded cheddar cheese until melted.
  8. Pour in 1 cup of milk and mix well.
  9. Add 1/2 cup of sour cream and stir until combined.
  10. Season with salt and black pepper to taste.
  11. Add 1/2 cup of diced cooked chicken, if using.
  12. Simmer for an additional 5 minutes.
  13. Garnish with sliced green onions before serving.
