Ingredients

  • 3 1/2 cups (830 ml) potatoes, peeled and diced
  • 1/3 cup (80 ml) celery, diced
  • 1/3 cup (80 ml) onion, finely chopped
  • 1 cup (240 ml) chopped carrot
  • 1 -2 cup (360 ml) beef, diced and cooked
  • 3 1/4 cups (780 ml) chicken broth or 3 1/4 cups (780 ml) beef stock
  • 2 tablespoons (30 ml) chicken bouillon granules (omit if using chicken broth)
  • salt (to taste)
  • 1 teaspoon (5 ml) pepper
  • 5 tablespoons (75 ml) vegetable oil
  • 5 tablespoons (75 ml) flour
  • 2 cups (480 ml) milk
  • 2 cups (480 ml) cheddar cheese, shredded


Instructions

  1. Place the potatoes, celery, carrots, onion, beef, and broth into a large pot and bring it to a boil.
  2. Once boiling, reduce to medium heat and cook until the potatoes are soft.
  3. Add the chicken bouillon, and season with salt and pepper to your liking.
  4. In another pan, heat the vegetable oil over medium-low heat. Mix in the flour, stirring continuously until it thickens.
  5. Gradually pour in the milk, stirring to avoid lumps, and increase the heat to medium. Keep stirring until it becomes thick, about 4-5 minutes.
  6. Incorporate the shredded cheddar cheese, stirring until it fully melts.
  7. Pour the cheesy mixture into the pot with the vegetables and beef, stirring until everything is thoroughly heated. You can mash some potatoes for a thicker consistency. The soup will thicken as it cools and will be even thicker the next day.

Notes

  • Consider using beef stock and more diced beef for a richer flavor. Use whole milk and extra cheddar cheese to make the soup creamier. Adjust seasoning with salt and pepper to taste before serving.
