Ingredients

  • 2 large zucchini
  • 5 tbsp (75 ml) olive oil (divided )
  • 2 cloves garlic, minced
  • 1 tbsp (15 ml) thyme, chopped
  • 2 tbsp (30 ml) grated parmesan cheese
  • 1/2 cup (120 ml) shredded moz zarella cheese


Instructions

  1. Cut each zucchini lengthwise, and make shallow crosshatch cuts on the inside. Add a bit of salt, and let them rest for 10 minutes. Afterward, pat away the excess moisture and salt.
  2. Set your oven to preheat at 450°F or your air fryer to 400°F.
  3. Warm up 1-2 tablespoons of olive oil in a large skillet over medium heat. Place the zucchinis with the cut side down and brown them for 5 minutes on each side.
  4. In a small bowl, combine 3 tablespoons of olive oil with the minced garlic, thyme, and salt and pepper as desired. Apply this mixture onto the cut sides of the zucchini. Sprinkle the grated Parmesan on top. Move them to your oven or air fryer and bake for around 15 more minutes. Take them out and sprinkle with mozzarella, then return to the oven for another 1-2 minutes to melt the cheese.
  5. Finish with a garnish of fresh basil and chili flakes.
