Ingredients
- 2 – 3 zucchini (about 2 cup (480 ml) s, sliced)
- 1 tablespoon (15 ml) olive oil
- 1/2 teaspoon (3 ml) pepper
- 1/2 teaspoon (3 ml) salt
- 1 cup (240 ml) shredded parmesan cheese
Instructions
- Set your oven to 450℉ to preheat.
- Cut the zucchini into slices approximately ¼ inch in thickness.
- Pour olive oil over the zucchini slices and mix them until they are evenly coated.
- Place the zucchini slices in a single layer on a baking tray.
- Add salt and pepper over the slices for seasoning.
- Sprinkle shredded parmesan cheese on top of the zucchini.
- Bake the zucchini in the middle section of the oven for roughly 10 minutes or until they become soft.
- To make the cheese golden, switch to the broiler setting and broil for 1-2 minutes, keeping a close watch to ensure the cheese turns just brown.
- Take out from the oven and serve while warm.
