Ingredients
- 2 medium yellow squash, sliced into 1/4-inch rounds
- 1 cup (240 ml) shredded cheddar cheese
- 1/4 cup (60 ml) grated Parmesan cheese
- 1/4 cup (60 ml) breadcrumbs
- 2 tablespoon (30 ml) s olive oil
- 1 teaspoon (5 ml) dried oregano
- 1 teaspoon (5 ml) dried basil
- Salt and pepper to taste
Instructions
- Preheat your oven to 375°F (190°C) and prepare a baking tray with parchment paper.
- In a mixing bowl, combine the breadcrumbs, Parmesan, oregano, basil, and season with salt and pepper.
- Lightly coat both sides of each squash slice with olive oil, then press them into the breadcrumb mixture to cover.
- Arrange the squash slices on the prepared baking sheet, ensuring they do not overlap. Distribute the shredded cheddar cheese evenly over them.
- Bake for 20-25 minutes until the cheese is melted, golden, and bubbling.
- Allow to cool for a few minutes before serving them warm.
