Ingredients

  • 2 medium yellow squash, sliced into 1/4-inch rounds
  • 1 cup (240 ml) shredded cheddar cheese
  • 1/4 cup (60 ml) grated Parmesan cheese
  • 1/4 cup (60 ml) breadcrumbs
  • 2 tablespoon (30 ml) s olive oil
  • 1 teaspoon (5 ml) dried oregano
  • 1 teaspoon (5 ml) dried basil
  • Salt and pepper to taste


Instructions

  1. Preheat your oven to 375°F (190°C) and prepare a baking tray with parchment paper.
  2. In a mixing bowl, combine the breadcrumbs, Parmesan, oregano, basil, and season with salt and pepper.
  3. Lightly coat both sides of each squash slice with olive oil, then press them into the breadcrumb mixture to cover.
  4. Arrange the squash slices on the prepared baking sheet, ensuring they do not overlap. Distribute the shredded cheddar cheese evenly over them.
  5. Bake for 20-25 minutes until the cheese is melted, golden, and bubbling.
