Ingredients

  • 1 large eggplant
  • 3 tablespoon (45 ml) s oil
  • Pinch salt
  • 1/4 teaspoon (1 ml) black pepper
  • 1/2 teaspoon (3 ml) garlic powder
  • ½ cup freshly grated parmesan (90 g)
  • ½ cup panko breadcrumbs (25 g)


Instructions

  1. Set your oven to 400°F (200°C) to preheat.
  2. Slice the eggplant into rounds, each approximately ¼ inch thick.
  3. Place the eggplant slices into a large bowl along with the other ingredients and mix well.
  4. Cover a large baking tray with aluminum foil and arrange the eggplant rounds on it. Sprinkle any remaining breadcrumbs and parmesan from the bowl on top.
