Ingredients
- 1 large eggplant
- 3 tablespoon (45 ml) s oil
- Pinch salt
- 1/4 teaspoon (1 ml) black pepper
- 1/2 teaspoon (3 ml) garlic powder
- ½ cup freshly grated parmesan (90 g)
- ½ cup panko breadcrumbs (25 g)
Instructions
- Set your oven to 400°F (200°C) to preheat.
- Slice the eggplant into rounds, each approximately ¼ inch thick.
- Place the eggplant slices into a large bowl along with the other ingredients and mix well.
