Ingredients
- 5 oz / 300g Asparagus (see notes)
- 3/4 cup / 75g Moz zarella, shredded
- 1/4 cup / 20g Parmesan, finely grated
- 2 cloves of Garlic, minced/finely diced
- 1 tbsp (15 ml) Olive Oil
- 1/4 tsp (1 ml) Salt
- 1/8 tsp (1 ml) Black Pepper
Instructions
- Remove and discard the tough ends of the asparagus, then combine with olive oil, minced garlic, salt, and black pepper. Arrange them evenly on a baking sheet.
- Place them in the oven at 390°F/200°C for about 8-10 minutes, or until they begin to wrinkle and become slightly tender.
- Remove from the oven and scatter mozzarella over the top, followed by a layer of Parmesan.
- Place under the broiler until the cheese is bubbly and turns a golden color, with the asparagus becoming tender enough to pierce with a fork. Serve immediately!
