Ingredients

  • 2 Cup (480 ml) s Cheddar Cheese
  • 1 Cup (240 ml) Ground Beef
  • 1/4 Cup (60 ml) Tomatoes, Chopped
  • 1/2 Avocado, Chopped
  • Taco Sauce and Other Keto Condiments


Instructions

  1. Set your oven to 400°F to preheat.
  2. Line a small baking tray with parchment paper, ensuring there’s extra on the sides for easy lifting of the cheese once cooked.
  3. Lightly coat the parchment paper with oil, particularly around the edges.
  4. Spread a single layer of grated Cheddar cheese over the baking tray (you might need more than two cups if your tray is larger).
  5. Place in the oven and cook for approximately 15 minutes, or until the cheese is bubbly and golden brown on top.
  6. Take it out of the oven and try to gently slide a silicone spatula under all edges and the center.
  7. If it’s not ready, return it to the oven until the spatula slides easily. Once it does, add the cooked ground beef and heat for another 5-10 minutes until warm.
  8. Meanwhile, mix the chopped tomatoes and avocado in a bowl. Feel free to add any other keto-friendly toppings you prefer, but ensure the layer remains thin for easy rolling.
  9. Once out of the oven, lift the cheese from the tray using the parchment paper edges.
  10. Spread the cold toppings in a single layer over the cheese.
  11. With the cheese laid out horizontally, cut it into 3-4 strips using a pizza cutter.
  12. Ensure the parchment isn’t sticking, then roll each strip from bottom to top.
