A delightful and comforting dish featuring yuca (cassava) topped with a zesty garlic and citrus mojo sauce.
Ingredients
- Yuca (cassava) – 1-2 pounds, peeled and cut into chunks
- Garlic cloves – 3-4, minced
- Olive oil or vegetable oil – ¼ cup
- Lemon or lime juice – 2-3 tablespoons
- Salt – to taste
- Cilantro (optional) – chopped, for garnish
Instructions
- Peel the yuca and cut it into chunks.
- Boil the yuca in salted water until tender, about 20-30 minutes. Drain and set aside.
- In a small saucepan, heat olive oil over medium heat.
- Add minced garlic and sauté until golden.
- Remove from heat and stir in lemon or lime juice.
- Pour the garlic oil over the boiled yuca and sprinkle with salt and chopped cilantro if desired.
- Serve warm.
Notes
Choose firm, heavy yuca for better texture and flavor. Consider experimenting with infused oils or spices during the garlic sauté for additional depth.
