Description

A delightful and comforting dish featuring yuca (cassava) topped with a zesty garlic and citrus mojo sauce.


Ingredients

  • Yuca (cassava) – 1-2 pounds, peeled and cut into chunks
  • Garlic cloves – 3-4, minced
  • Olive oil or vegetable oil – ¼ cup
  • Lemon or lime juice – 2-3 tablespoons
  • Salt – to taste
  • Cilantro (optional) – chopped, for garnish


Instructions

  1. Peel the yuca and cut it into chunks.
  2. Boil the yuca in salted water until tender, about 20-30 minutes. Drain and set aside.
  3. In a small saucepan, heat olive oil over medium heat.
  4. Add minced garlic and sauté until golden.
  5. Remove from heat and stir in lemon or lime juice.
  6. Pour the garlic oil over the boiled yuca and sprinkle with salt and chopped cilantro if desired.
  7. Serve warm.

Notes

Choose firm, heavy yuca for better texture and flavor. Consider experimenting with infused oils or spices during the garlic sauté for additional depth.
