Description

A comforting dish of soft cassava paired with a vibrant citrusy mojo sauce, perfect for family gatherings and simple, wholesome meals.


Ingredients

  • 2 pounds of yuca (cassava)
  • 4 cloves garlic, minced
  • 1/2 cup olive oil
  • 1/4 cup sour orange juice (or a mix of orange and lime juice)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon chopped fresh cilantro (optional)


Instructions

  1. Peel the yuca and cut into large chunks.
  2. Boil the yuca in salted water for about 20-30 minutes, or until tender.
  3. Prepare the mojo sauce by heating olive oil in a skillet over medium heat. Add minced garlic and sauté until fragrant.
  4. Add the sour orange juice, salt, and black pepper to the skillet, mixing well and cooking for an additional minute.
  5. Drain the cooked yuca and serve with the mojo sauce drizzled over the top. Garnish with cilantro if desired.

Notes

For enhanced flavor, try adding crushed red pepper or a pinch of cumin to the mojo sauce. Avoid burning garlic for the best taste.
