Description

A delightful dish of cassava served with a vibrant mojo sauce, perfect for family gatherings and celebrating home-cooked meals.


Ingredients

  • 2 pounds yuca (cassava)
  • 4 cloves garlic, minced
  • 1/2 cup olive oil
  • 1/4 cup sour orange juice (or a mix of orange and lime juice)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon chopped fresh cilantro (optional)


Instructions

  1. Peel the yuca and cut into large chunks.
  2. Boil the yuca in salted water for about 20-30 minutes, or until tender.
  3. Prepare the mojo sauce by heating olive oil in a skillet over medium heat. Add minced garlic and sauté until fragrant.
  4. Add the sour orange juice, salt, and black pepper to the skillet, mixing well and cooking for an additional minute.
  5. Drain the yuca once cooked and serve with the mojo sauce drizzled over the top. Garnish with cilantro if desired.

Notes

For enhanced flavor, consider marinating the cassava before boiling. A pinch of cumin or crushed red pepper can also be added to the mojo sauce for an exciting twist.
