Delicious and nutritious pancakes made with cottage cheese and protein powder for a protein-rich breakfast.
Ingredients
- 100g cottage cheese (about 1/2 cup)
- 2 large scoops protein powder
- 3 large eggs
- 1 teaspoon baking powder
- 1 tablespoon grass-fed butter (for cooking)
Instructions
- Combine the cottage cheese, eggs, protein powder, and baking powder in an electric blender. Blend until smooth, or mix in a bowl until well combined.
- Heat a frying pan over medium-high heat and melt the butter.
- Pour a spoonful of the batter into the pan, spreading it slightly. Cook for about 1 minute until the bottom has firmed and edges set.
- Flip the pancake and cook for another 30-45 seconds until golden brown.
- Repeat with the remaining batter, adding more butter to the pan as needed.
Notes
Customize your pancakes by adding vanilla extract, cinnamon, or even chocolate chips for added flavor.
