Description

Delicious and nutritious pancakes made with cottage cheese and protein powder for a protein-rich breakfast.


Ingredients

  • 100g cottage cheese (about 1/2 cup)
  • 2 large scoops protein powder
  • 3 large eggs
  • 1 teaspoon baking powder
  • 1 tablespoon grass-fed butter (for cooking)


Instructions

  1. Combine the cottage cheese, eggs, protein powder, and baking powder in an electric blender. Blend until smooth, or mix in a bowl until well combined.
  2. Heat a frying pan over medium-high heat and melt the butter.
  3. Pour a spoonful of the batter into the pan, spreading it slightly. Cook for about 1 minute until the bottom has firmed and edges set.
  4. Flip the pancake and cook for another 30-45 seconds until golden brown.
  5. Repeat with the remaining batter, adding more butter to the pan as needed.

Notes

Customize your pancakes by adding vanilla extract, cinnamon, or even chocolate chips for added flavor.
