Description

A vibrant blend of roasted asparagus, cherry tomatoes, and mozzarella drizzled with balsamic glaze, perfect as a side dish or light lunch.


Ingredients

  • 1 pound asparagus, trimmed
  • 1 cup cherry tomatoes, halved
  • 8 ounces fresh mozzarella, diced
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Balsamic glaze for drizzling
  • Fresh basil leaves for garnish (optional)


Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Place the trimmed asparagus and halved cherry tomatoes on a baking sheet.
  3. Drizzle with olive oil and season with salt and pepper.
  4. Roast in the preheated oven for about 15-20 minutes, or until the asparagus is tender.
