Description
A refreshing and satisfying pasta salad that combines the classic flavors of a Caprese salad with hearty pasta, drizzled with balsamic glaze.
Ingredients
- 8 oz fusilli or penne pasta
- 2 cups cherry tomatoes, halved
- 8 oz mozzarella balls (preferably bocconcini)
- 1 cup fresh basil leaves, torn
- 1/4 cup balsamic glaze
- 2 tbsp olive oil
- 1/2 tsp salt
- 1/4 tsp pepper
Instructions
- Cook the pasta according to package instructions until al dente. Drain and let cool.
- In a large bowl, combine the cooled pasta with cherry tomatoes, mozzarella, and basil.
- Drizzle with balsamic glaze and olive oil.
- Season with salt and pepper to taste.
- Toss everything gently to combine.
- Serve chilled or at room temperature.
Notes
Enhance with fresh mozzarella and consider adding arugula or spinach for a peppery note. Storage: Keeps well in the refrigerator for up to three days.
