Ingredients
- 2 cups (480 ml) white rice
- 1 pound (450 g) boneless skinless chicken breast
- 1 tablespoon (15 ml) olive oil
- 2 teaspoon s (10 g) Cajun seasoning
- 1 teaspoon (5 g) garlic powder
- 1 teaspoon (5 g) onion powder
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 green bell pepper, sliced
- 1 cup (240 ml) corn kernels
- 1 can (15 oz (425 g)/425 g) black beans, drained and rinsed
- 2 green onions, chopped
- 1 lime, juiced
- Salt to taste
- Black pepper to taste
Instructions
- Rinse 2 cups of white rice under cold water until the water runs clear.
- In a medium saucepan, combine rice with 4 cups of water and a pinch of salt.
- Bring the water to a boil over medium-high heat.
- Once boiling, reduce heat to low, cover, and simmer for 15-20 minutes until water is absorbed.
- Remove the saucepan from heat and let it sit, covered, for 5 minutes.
- Fluff the rice with a fork and set aside.
- Cut 1 pound of boneless, skinless chicken breast into bite-sized pieces.
- In a large bowl, combine the chicken with 2 teaspoons of Cajun seasoning, 1 teaspoon garlic powder, and 1 teaspoon onion powder.
- Heat 1 tablespoon of olive oil in a large skillet over medium-high heat.
- Add the seasoned chicken to the skillet and cook for 5-7 minutes, stirring occasionally, until browned and cooked through.
- Remove the chicken from the skillet and set aside.
- In the same skillet, add sliced red, yellow, and green bell peppers.
- Sauté the bell peppers for 5 minutes until they are slightly softened.
- Add 1 cup of corn kernels and 1 can of drained and rinsed black beans to the skillet.
- Cook for another 3-4 minutes until the corn and beans are heated through.
- Return the cooked chicken to the skillet and stir to combine with the vegetables.
- Season the mixture with salt and black pepper to taste.
- Remove the skillet from heat and add the juice of 1 lime.
- Divide the cooked rice into bowls.
- Top each bowl with the chicken and vegetable mixture.
- Garnish with chopped green onions.
- Serve and enjoy your Cajun Blaze Bowls.
