Ingredients

  • 2 cups (480 ml) white rice
  • 1 pound (450 g) boneless skinless chicken breast
  • 1 tablespoon (15 ml) olive oil
  • 2 teaspoon s (10 g) Cajun seasoning
  • 1 teaspoon (5 g) garlic powder
  • 1 teaspoon (5 g) onion powder
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 cup (240 ml) corn kernels
  • 1 can (15 oz (425 g)/425 g) black beans, drained and rinsed
  • 2 green onions, chopped
  • 1 lime, juiced
  • Salt to taste
  • Black pepper to taste


Instructions

  1. Rinse 2 cups of white rice under cold water until the water runs clear.
  2. In a medium saucepan, combine rice with 4 cups of water and a pinch of salt.
  3. Bring the water to a boil over medium-high heat.
  4. Once boiling, reduce heat to low, cover, and simmer for 15-20 minutes until water is absorbed.
  5. Remove the saucepan from heat and let it sit, covered, for 5 minutes.
  6. Fluff the rice with a fork and set aside.
  7. Cut 1 pound of boneless, skinless chicken breast into bite-sized pieces.
  8. In a large bowl, combine the chicken with 2 teaspoons of Cajun seasoning, 1 teaspoon garlic powder, and 1 teaspoon onion powder.
  9. Heat 1 tablespoon of olive oil in a large skillet over medium-high heat.
  10. Add the seasoned chicken to the skillet and cook for 5-7 minutes, stirring occasionally, until browned and cooked through.
  11. Remove the chicken from the skillet and set aside.
  12. In the same skillet, add sliced red, yellow, and green bell peppers.
  13. Sauté the bell peppers for 5 minutes until they are slightly softened.
  14. Add 1 cup of corn kernels and 1 can of drained and rinsed black beans to the skillet.
  15. Cook for another 3-4 minutes until the corn and beans are heated through.
  16. Return the cooked chicken to the skillet and stir to combine with the vegetables.
  17. Season the mixture with salt and black pepper to taste.
  18. Remove the skillet from heat and add the juice of 1 lime.
  19. Divide the cooked rice into bowls.
  20. Top each bowl with the chicken and vegetable mixture.
  21. Garnish with chopped green onions.
  22. Serve and enjoy your Cajun Blaze Bowls.
