A simple and nourishing cabbage soup recipe that brings comfort and connection to the table.
Ingredients
- 1 medium head of cabbage, chopped
- 2 carrots, diced
- 1 onion, chopped
- 3 cloves garlic, minced
- 6 cups vegetable or chicken broth
- 1 can of diced tomatoes
- Salt and pepper to taste
- Optional: shredded chicken, ground beef, or sausage
Instructions
- In a large pot, heat some oil over medium heat and sauté the onions and garlic until fragrant.
- Add the carrots and cook for a few more minutes.
- Stir in the cabbage and cook until it starts to wilt.
- Pour in the broth and diced tomatoes, and season with salt and pepper.
- Bring to a boil, then reduce heat and let simmer for about 30 minutes.
- Add in any optional ingredients like chicken or sausage and cook until heated through.
- Serve hot.
