Ingredients

  • 1 cup (227 g) butter, room temperature
  • 1 3/4 cup (350 g) brown sugar, packed
  • 2 large eggs, room temperature
  • 1 teaspoon (5 ml) vanilla
  • 2 cups (250 g) all-purpose flour
  • 1 teaspoon (5 ml) baking powder
  • 1/4 teaspoon (1 ml) salt
  • 1 1/2 cup (360 ml) finely grated and drained zucchini, packed
  • 1 1/2 cup (360 ml) s butterscotch morsels


Instructions

  1. Set your oven to 350°F and prepare a 9×13 baking dish with non-stick spray or by greasing it and dusting with flour.
  2. In a sizable mixing bowl, combine the butter and brown sugar. Beat them with a hand mixer until the mixture is light and airy.
  3. Incorporate the eggs and vanilla extract into the butter mixture, blending thoroughly for 1-2 minutes. Make sure to scrape the bowl’s sides as necessary.
  4. Introduce the flour, baking powder, and salt to the bowl, mixing on a medium-low setting until just mixed together.
  5. Gently fold in the grated zucchini on a low speed. The mixture should be fluid; if it seems too dry, allow it to rest for about 5 minutes.
  6. Mix in 1 cup of butterscotch morsels using a spatula.
  7. Transfer the batter into the prepared baking dish and sprinkle the remaining butterscotch morsels over the top.
  8. Bake for 40 minutes, then check if it’s done by inserting a toothpick. It should come out with a few crumbs but not with wet batter. The top and edges should look darkened, which is desired.
