Ingredients

  • 8 large eggs
  • 1/4 cup milk (60 ml)
  • 2 tablespoons olive oil (30 ml)
  • 1 small butternut squash, peeled and diced (about 2 cups or 280 g)
  • 1 cup fresh spinach, chopped (30 g)
  • 1/2 cup crumbled feta cheese (75 g)
  • 1/2 teaspoon salt (2.5 g)
  • 1/4 teaspoon black pepper (0.6 g)
  • 1 teaspoon dried oregano (1 g)
  • 1 clove garlic, minced


Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large bowl, whisk together the eggs, milk, salt, pepper, and oregano.
  3. Heat 1 tablespoon of olive oil in an ovenproof skillet over medium heat.
  4. Add the diced butternut squash to the skillet.
  5. Cook the squash for 10-12 minutes, stirring occasionally, until tender.
  6. Add the minced garlic to the skillet and cook for 1 minute, until fragrant.
  7. Add the chopped spinach to the skillet and cook for 2-3 minutes, until wilted.
  8. Remove the skillet from heat and allow the mixture to cool slightly.
  9. Pour the egg mixture over the vegetables in the skillet.
  10. Sprinkle the crumbled feta cheese evenly over the top.
  11. Transfer the skillet to the preheated oven.
  12. Bake for 20-25 minutes, until the eggs are set and the top is golden.
  13. Remove from the oven and let it cool for a few minutes before slicing.
  14. Serve warm, cut into wedges.
