Description

A delicious and creamy Bruschetta Dip combining fresh diced Roma tomatoes, feta, and cream cheese, perfect for gatherings and enjoyable moments around the table.


Ingredients

  • 4 Roma tomatoes, diced
  • ¼ cup fresh basil leaves, chopped
  • 1 garlic clove, minced
  • 1 tablespoon extra virgin olive oil
  • 1–2 teaspoons balsamic vinegar (to taste)
  • Salt, to taste
  • 8 oz feta cheese block, crumbled
  • ½ block cream cheese (4 oz), softened
  • ½ cup sour cream
  • 1 garlic clove, minced (for cheese mixture)
  • 1 tablespoon freshly squeezed lemon juice
  • 1 tablespoon olive oil (for cheese mixture)
  • More basil leaves, chopped (for garnish)
  • Red pepper flakes (to taste)
  • Freshly grated Parmesan cheese (for topping)


Instructions

  1. Dice the Roma tomatoes and place them in a large mixing bowl.
  2. Add freshly chopped basil leaves, minced garlic, olive oil, balsamic vinegar, and a pinch of salt to the tomatoes.
  3. Allow the mixture to sit for at least 15 minutes to let the flavors meld.
  4. In a separate bowl, combine the crumbled feta cheese, softened cream cheese, sour cream, the second minced garlic clove, lemon juice, and olive oil.
  5. Blend these ingredients until smooth, creating a creamy cheese mixture.
  6. Adjust seasoning with salt if needed.
  7. Assemble the dip by layering the bruschetta mixture on top of the cheese mixture in a serving dish.
  8. Finish with chopped basil leaves, red pepper flakes, and freshly grated Parmesan cheese on top for added texture and flavor.

Notes

For best flavor, allow the tomato-basil mixture to sit before serving. Adjust seasoning based on taste preference.
