Description

Delicious brown butter sourdough cinnamon rolls with a sweet cinnamon filling and creamy frosting.


Ingredients

  • 200 g whole milk (warm)
  • 120 g sourdough starter (active and bubbly)
  • 70 g granulated sugar
  • 1 large egg (room temperature)
  • 430 g bread flour (plus extra for dusting)
  • 5 g salt
  • 6 tbsp unsalted butter (softened)
  • 3/4 cup brown sugar (160 g)
  • 2 tsp ground cinnamon (6 g)
  • 1/8 tsp salt (1 g)
  • 1 tbsp all-purpose flour (9 g)
  • 8 tbsp unsalted butter (113 g, melted)
  • 3 oz cream cheese (softened)
  • 2 cups powdered sugar (250 g)
  • 2 tsp vanilla extract (8 g)
  • 1 tbsp milk (14 g)


Instructions

  1. In a large bowl, mix the warm whole milk, sourdough starter, granulated sugar, and room-temperature egg. Whisk until well combined.
  2. Gradually incorporate the bread flour and salt into the mixture, stirring with a spatula or your hands until a shaggy dough forms.
  3. Transfer the dough to a floured surface. Knead the dough for about 10-15 minutes until smooth and elastic. Incorporate the softened butter towards the end of the kneading process.
  4. Place the kneaded dough into a lightly greased bowl. Cover it with a damp cloth and let it bulk ferment for 4-6 hours at room temperature, or until it doubles in size.
  5. During the final hour of fermentation, prepare the filling by combining brown sugar, cinnamon, salt, and all-purpose flour in a separate bowl, and melting the remaining butter.
  6. Once the dough has risen, turn it out onto a floured surface and roll it into a large rectangle.
  7. Brush the melted butter over the surface of the dough and sprinkle the prepared filling evenly across.
  8. Starting from one long edge, tightly roll the dough into a log. Slice the log into equal pieces.
  9. Place the rolls into a greased baking dish. Cover them and let them rise again for about 1-2 hours, until puffy.
  10. Preheat your oven to 375°F (190°C). Bake the rolls for 25-30 minutes, or until they turn golden brown.
  11. While the rolls bake, prepare the frosting by mixing softened cream cheese, powdered sugar, vanilla extract, and milk until smooth.
  12. After baking, let the rolls cool slightly. Drizzle the frosting over the warm rolls and enjoy!
