A comforting and creamy soup made with fresh broccoli, cauliflower, and sharp cheddar cheese, perfect for chilly evenings.
Ingredients
- 2 tablespoons olive oil
- 1 cup diced carrots
- 1 cup diced celery
- 1 cup diced onion
- Salt and pepper (to taste)
- 3 tablespoons all-purpose flour
- 4 cups water
- 4 teaspoons chicken base
- 3 cups fresh broccoli florets
- 3 cups fresh cauliflower florets
- 1 cup half and half
- 2 cups shredded sharp cheddar cheese
Instructions
- In a large pot, heat the olive oil over medium heat. Add the diced carrots, celery, and onions, seasoning lightly with salt and pepper. Sauté until soft, about 5 minutes.
- Sprinkle the flour over the sautéed vegetables and cook for another minute, stirring continuously.
- Combine water with chicken base and pour into the pot. Add broccoli and cauliflower.
- Bring to a boil, then reduce to a simmer, covering the pot. Let it simmer until vegetables are tender, about 10 minutes.
- Turn off the heat. Mash the veggies to your desired consistency.
- Stir in half and half and shredded cheese until melted. Adjust seasoning as necessary.
Notes
For extra flavor, add garlic or herbs during sautéing. Use an immersion blender for a creamier texture if desired.
