Description

A comforting and creamy soup made with fresh broccoli, cauliflower, and sharp cheddar cheese, perfect for chilly evenings.


Ingredients

  • 2 tablespoons olive oil
  • 1 cup diced carrots
  • 1 cup diced celery
  • 1 cup diced onion
  • Salt and pepper (to taste)
  • 3 tablespoons all-purpose flour
  • 4 cups water
  • 4 teaspoons chicken base
  • 3 cups fresh broccoli florets
  • 3 cups fresh cauliflower florets
  • 1 cup half and half
  • 2 cups shredded sharp cheddar cheese


Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the diced carrots, celery, and onions, seasoning lightly with salt and pepper. Sauté until soft, about 5 minutes.
  2. Sprinkle the flour over the sautéed vegetables and cook for another minute, stirring continuously.
  3. Combine water with chicken base and pour into the pot. Add broccoli and cauliflower.
  4. Bring to a boil, then reduce to a simmer, covering the pot. Let it simmer until vegetables are tender, about 10 minutes.
  5. Turn off the heat. Mash the veggies to your desired consistency.
  6. Stir in half and half and shredded cheese until melted. Adjust seasoning as necessary.

Notes

For extra flavor, add garlic or herbs during sautéing. Use an immersion blender for a creamier texture if desired.
