  • 3 garlic cloves, chopped
  • 1/4 cup (30 g) all-purpose flour
  • 2 cups (480 ml) whole milk or unsweetened almond milk
  • 2 cups (480 ml) vegetable broth
  • 3 cups (360 g) chopped broccoli florets
  • 1 large carrot, julienned or finely chopped
  • 1/2 teaspoon (2.5 ml) Dijon mustard
  • 8 ounces (225 g) shredded cheddar cheese, about 2 heaping cups
  • Homemade croutons, for serving, optional


Instructions

  1. Heat the vegetable oil in a large pot or Dutch oven on medium heat. Add the chopped onion, sea salt, and a few dashes of freshly ground black pepper, then sauté, stirring frequently, for about 5 minutes until the onion becomes soft. Incorporate the chopped garlic and continue cooking for an additional minute. Sprinkle the all-purpose flour and whisk constantly for 1 to 2 minutes until it becomes golden brown. Gradually add the milk while whisking continuously.
  2. Pour in the vegetable broth, then add the chopped broccoli florets, julienned carrot, and Dijon mustard, stirring well to mix everything together. Let the mixture simmer for 15 to 20 minutes until the broccoli is soft.
  3. Slowly incorporate the shredded cheddar cheese, stirring after each addition, until all the cheese is melted and the soup achieves a creamy consistency. Adjust the seasoning to your liking and serve with homemade croutons, if you wish.
