Ingredients
- 2 medium Sweet Potatoes
- 4 slices Bacon
- 2 Eggs
- 1/2 cup Cheese of your choice
- Salt to taste
- Pepper to taste
- 2 Green Onions (optional)
Instructions
- Preheat the oven to 400°F (200°C).
- Wash and pierce sweet potatoes with a fork.
- Bake sweet potatoes in the oven for 45 minutes to 1 hour or until tender.
- Meanwhile, cook the bacon in a skillet until crispy. Remove and drain on paper towels.
- In the same skillet, fry the eggs sunny-side up or to your preference.
- Once the sweet potatoes are done, cut them open and fluff the insides with a fork.
- Top each sweet potato with crumbled bacon, a fried egg, cheese, salt, and pepper.
- Garnish with green onions if desired.
