Description

Delightful breakfast sweet potatoes topped with crispy bacon, a perfectly cooked egg, and gooey cheese for a warm, nostalgic morning meal.


Ingredients

  • 2 medium Sweet Potatoes
  • 4 slices Bacon
  • 2 Eggs
  • 1/2 cup Cheese of your choice
  • Salt to taste
  • Pepper to taste
  • 2 Green Onions (optional)


Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wash and pierce sweet potatoes with a fork.
  3. Bake sweet potatoes in the oven for 45 minutes to 1 hour or until tender.
  4. Meanwhile, cook the bacon in a skillet until crispy. Remove and drain on paper towels.
  5. In the same skillet, fry the eggs sunny-side up or to your preference.
  6. Once the sweet potatoes are done, cut them open and fluff the insides with a fork.
  7. Top each sweet potato with crumbled bacon, a fried egg, cheese, salt, and pepper.
  8. Garnish with green onions if desired.
  9. Serve hot and enjoy a hearty breakfast!

Notes

Avoid soft or blemished sweet potatoes for the best results. You can microwave sweet potatoes to save time but baking is recommended for flavor.
