Description

A hearty breakfast casserole with breakfast sausage, vibrant veggies, crispy bacon, and gooey cheese, perfect for cozy mornings.


Ingredients

  • 1 pound breakfast sausage
  • 1 cup diced veggies (e.g., bell peppers, onions, spinach)
  • 4 slices of bacon, cooked and crumbled
  • 6 eggs
  • 2 cups shredded cheese (e.g., cheddar, mozzarella)
  • 1 package of tater tots
  • Salt and pepper to taste


Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a skillet, cook the breakfast sausage until browned.
  3. In a large mixing bowl, combine the cooked sausage, diced veggies, crumbled bacon, eggs, cheese, and tater tots. Season with salt and pepper.
  4. Pour the mixture into a greased baking dish.
  5. If making ahead, cover and refrigerate overnight.
