Description

These Boston Cream Pie Cookie Bites feature creamy vanilla pudding, rich chocolate ganache, and a crunchy Nilla Wafer base, offering a delightful spin on traditional dessert flavors.


Ingredients

  • 1 (3.4 oz) box of vanilla instant pudding mix
  • 1 cup of cold milk
  • 1 cup of heavy whipping cream (divided)
  • 3 tablespoons of powdered sugar
  • 1 cup of semi-sweet chocolate chips
  • 70 Nilla Wafers (divided)


Instructions

  1. Combine the vanilla pudding mix with the cold milk in a medium mixing bowl. Whisk thoroughly to remove any lumps and set aside for about 5 minutes to thicken.
  2. Mix ½ cup of heavy whipping cream with 3 tablespoons of powdered sugar in another mixing bowl. Whip until you achieve stiff peaks, then gently fold this whipped cream into your thickened vanilla pudding.
  3. Transfer the vanilla pudding mixture into a piping bag or Ziploc bag and place it in the fridge to keep it chilled while preparing the ganache.
  4. Add the chocolate chips and the remaining heavy whipping cream to a microwave-safe bowl. Microwave for about 45 seconds until the cream is hot but not boiling. Stir until the chocolate melts and is smooth, then pour the ganache into another piping bag or Ziploc bag and set aside.
  5. Lay half of the Nilla Wafers flat side up on a lined baking sheet. Pipe a dollop of the vanilla pudding filling onto each wafer, then press another wafer on top to create a sandwich.
  6. Top each cookie sandwich with a dollop of ganache, smoothing it out if necessary.
  7. Chill the assembled cookie bites in the fridge for at least 30 minutes before serving.

Notes

Chill the whipped cream bowl and beaters for better whipping results. Experiment with different cookie bases for variations.
