A refreshing and vibrant coleslaw made with green and red cabbage, grated carrots, and a creamy dressing, perfect for summer gatherings.
Ingredients
- 1 small green cabbage, shredded
- 1 small red cabbage, shredded
- 2 large carrots, grated
- 1/2 cup mayonnaise
- 1 tablespoon apple cider vinegar
- 1 tablespoon Dijon mustard
- 1 tablespoon honey
- Salt and pepper to taste
- Optional: sliced jalapeños for heat
Instructions
- In a large bowl, combine both types of cabbage and the grated carrots, mixing thoroughly to ensure even distribution.
- In a separate bowl, whisk together the mayonnaise, apple cider vinegar, Dijon mustard, honey, salt, and pepper until smooth and well combined.
- Pour the dressing over the cabbage and carrots in the large bowl. Toss gently to coat everything evenly.
- If desired, stir in sliced jalapeños for an added kick of heat.
- Chill in the refrigerator for at least 30 minutes before serving to allow the flavors to meld.
Notes
For a creamier texture, increase the mayonnaise but adjust other flavors accordingly.
