Description

A refreshing and vibrant coleslaw made with green and red cabbage, grated carrots, and a creamy dressing, perfect for summer gatherings.


Ingredients

  • 1 small green cabbage, shredded
  • 1 small red cabbage, shredded
  • 2 large carrots, grated
  • 1/2 cup mayonnaise
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon Dijon mustard
  • 1 tablespoon honey
  • Salt and pepper to taste
  • Optional: sliced jalapeños for heat


Instructions

  1. In a large bowl, combine both types of cabbage and the grated carrots, mixing thoroughly to ensure even distribution.
  2. In a separate bowl, whisk together the mayonnaise, apple cider vinegar, Dijon mustard, honey, salt, and pepper until smooth and well combined.
  3. Pour the dressing over the cabbage and carrots in the large bowl. Toss gently to coat everything evenly.
  4. If desired, stir in sliced jalapeños for an added kick of heat.
  5. Chill in the refrigerator for at least 30 minutes before serving to allow the flavors to meld.

Notes

For a creamier texture, increase the mayonnaise but adjust other flavors accordingly.
