A delightful breakfast dish that combines creamy cottage cheese with sweet blueberries for a warm, nourishing start to your day.
Ingredients
- 2 cups full-fat cottage cheese
- 4 eggs
- 4 tablespoons sweetener of choice
- 2 teaspoons vanilla extract
- 2 tablespoons cornstarch
- 1 teaspoon lemon zest
- 1½ cups blueberries (divided)
Instructions
- Preheat the oven to 350°F (175°C) and grease your 8×8 baking dish.
- Strain the cottage cheese for 2–3 minutes to remove excess liquid and set aside.
- Blend together the cottage cheese, eggs, sweetener, vanilla, and cornstarch until smooth, adding 1 teaspoon of milk if too thick.
- Gently fold in the blueberries and lemon zest.
- Pour the mixture into the greased dish and spread it evenly. Tap the dish to remove air bubbles.
- Bake for 35-40 minutes until edges are set and a toothpick comes out mostly clean.
- Allow to cool for 10-15 minutes before slicing. Top with extra blueberries if desired.
Notes
For best results, use fresh blueberries and check the doneness with a toothpick. Letting the dish cool helps with slicing and presentation.
