Ingredients
- 1 cup unsalted butter
- 1/2 cup granulated sugar
- 2 cups all-purpose flour
- 1/4 teaspoon salt
- 1/2 cup blackberry preserves
- 1/2 cup chopped pistachios
- 1/4 teaspoon vanilla extract
Instructions
- Preheat the oven to 350°F (175°C) and grease a 9×9-inch baking pan.
- Cream together the butter and sugar until light and fluffy.
- Gradually integrate the flour and salt, mixing until just combined.
- Press half of the mixture into the prepared baking pan as a base.
- Spread the blackberry preserves evenly over the crust.
- Sprinkle chopped pistachios on top of the preserves.
- Crumble the remaining dough over the pistachios.
- Bake for 25-30 minutes until golden brown.
- Allow to cool in the pan before cutting into squares.
Notes
For best results, use room temperature butter for easy creaming, and avoid overbaking to keep the bars moist.
