Description

A refreshing pie that combines the tartness of lemon with the sweet, luscious notes of blackberry, served in a buttery Golden Oreo crust.


Ingredients

  • 30 Golden Oreo cookies
  • 1/3 cup butter, melted
  • 2 (8 oz.) packages of cream cheese, softened
  • 1 (14 oz.) can of sweetened condensed milk
  • 1 teaspoon lemon zest
  • 3/4 cup lemon juice
  • 1 cup whipping cream
  • 2 tablespoons sugar
  • 1/4 cup seedless blackberry jam, melted and cooled


Instructions

  1. In a food processor, pulse the 30 Golden Oreo cookies to form crumbs.
  2. Add the melted butter and pulse to combine.
  3. Press the mixture into the bottom and up the sides of a 9-inch deep dish pie pan. Freeze the crust while preparing the filling.
  4. In a large bowl, beat the softened cream cheese with an electric mixer until smooth.
  5. Add the sweetened condensed milk and beat for one minute.
  6. Incorporate the lemon juice and lemon zest, beating until the mixture becomes smooth.
  7. In a separate bowl, use an electric mixer to beat the whipping cream and sugar until stiff peaks form.
  8. Gently fold the whipped cream into the cream cheese mixture until fully incorporated.
  9. Spread the filling into the prepared crust.
  10. Spoon the melted blackberry jam over the top, swirling it gently with a sharp knife.
  11. Cover the pie and refrigerate until firm, about 240 to 360 minutes.

Notes

For stronger lemon flavor, increase the lemon zest. Garnishing with fresh blackberries enhances presentation and flavor.
