Ingredients

  • 1 cup fresh blackberries
  • 1/2 cup lemon juice
  • 1 lemon, zested
  • 1 cup all-purpose flour
  • 1/2 cup powdered sugar
  • 1/2 cup unsalted butter, softened
  • 1 egg
  • 1 tablespoon fresh thyme leaves
  • 1/4 teaspoon salt


Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Combine the all-purpose flour, powdered sugar, and salt in a large mixing bowl.
  3. Add the softened unsalted butter to the dry mixture and blend until the texture becomes crumbly.
  4. Press this crumbly mixture into the bottom of a greased 8-inch square pan, ensuring even coverage.
  5. Bake the crust for about 15 minutes or until it turns lightly golden.
  6. Whisk together the egg, lemon juice, lemon zest, fresh thyme leaves, and fresh blackberries in another bowl until well combined.
