Ingredients
- 1 cup black beans, rinsed and drained
- 1 cup rice
- 1 pound sausage (smoked or andouille)
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 bell pepper, chopped
- 2 cups chicken broth
- 1 teaspoon cumin
- 1 teaspoon paprika
- Salt and pepper to taste
- Olive oil
Instructions
- Heat olive oil in a large pot over medium heat. Add chopped onion, bell pepper, and minced garlic. Sauté until softened.
- Slice the sausage and add it to the pot. Cook until browned.
- Stir in black beans, rice, chicken broth, cumin, paprika, salt, and pepper. Bring to a boil.
- Reduce heat and cover the pot. Simmer for 20-25 minutes, or until the rice is cooked and liquid is absorbed.
- Fluff the rice with a fork and serve hot.
