Description

A comforting dish of black beans and rice enhanced with savory sausage, perfect for sharing with loved ones.


Ingredients

  • 1 cup black beans, rinsed and drained
  • 1 cup rice
  • 1 pound sausage (smoked or andouille)
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, chopped
  • 2 cups chicken broth
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Olive oil


Instructions

  1. Heat olive oil in a large pot over medium heat. Add chopped onion, bell pepper, and minced garlic. Sauté until softened.
  2. Slice the sausage and add it to the pot. Cook until browned.
  3. Stir in black beans, rice, chicken broth, cumin, paprika, salt, and pepper. Bring to a boil.
  4. Reduce heat and cover the pot. Simmer for 20-25 minutes, or until the rice is cooked and liquid is absorbed.
  5. Fluff the rice with a fork and serve hot.
