  • 1 cup (240 ml) tomatoes, seeded and chopped
  • 1/2 cup (120 ml) onion, finely chopped
  • 1/3 cup (80 ml) Parmesan cheese, grated
  • 1/2 cup (120 ml) Moz zarella cheese, shredded
  • 2/3 cup (160 ml) Bisquick
  • 3/4 cup (180 ml) milk
  • 3 large eggs
  • 1 1/2 teaspoon (8 ml) s Italian seasoning
  • 1/2 teaspoon (3 ml) salt
  • 1/4 teaspoon (1 ml) pepper


Instructions

  1. Begin by setting your oven to a temperature of 400°F and allow it to preheat. Take a 9-inch pie dish with deep sides and give it a light coating of nonstick cooking spray; place it to one side.
  2. In the dish you’ve prepared, arrange the zucchini in an even layer, followed by the tomatoes.
  3. Next, add a layer of onions.
  4. Sprinkle the Parmesan and Mozzarella cheeses on top.
  5. In a large bowl, combine the rest of the ingredients by whisking them together with a fork until they are well mixed.
  6. Carefully pour this mixture over the layered vegetables in the pie dish.
  7. Place the dish in the oven and bake until a knife inserted into the center comes out clean, which should take approximately 35 minutes.
