Ingredients
- 1 cup vanilla protein powder
- 1 cup oat flour
- 1/2 cup cashew or almond butter
- 1/4 cup honey or maple syrup
- 1 teaspoon vanilla extract
- 1/2 teaspoon almond extract
- 1/2 cup rainbow sprinkles
- 1 pinch salt
- 3-4 tablespoons milk of choice
Instructions
- In a large mixing bowl, combine the protein powder and oat flour.
- In a separate bowl, mix the cashew or almond butter, honey or maple syrup, vanilla extract, almond extract, and salt until well incorporated.
- Gradually add the dry mixture to the wet ingredients, stirring until well combined.
- Stir in the rainbow sprinkles.
- Add 3-4 tablespoons of milk as needed to achieve a dough-like consistency.
- Using your hands, form the mixture into small balls and place them on a baking sheet.
- Chill in the refrigerator for about 30 minutes to firm up.
Notes
Try adding mini chocolate chips or cocoa powder for a decadent twist. Store in an airtight container in the refrigerator for up to a week.
