Ingredients
- 2 tablespoon s olive oil (30 ml)
- 1 large onion, chopped
- 2 cloves garlic, minced
- 1 red bell pepper, chopped
- 1 green bell pepper, chopped
- 1 medium zucchini, sliced
- 1 medium yellow squash, sliced
- 1 cup mushrooms, sliced (75 g)
- 1 can diced tomatoes, drained (14.5 oz / 411 g)
- 1 teaspoon (5 ml) dried oregano
- 1 teaspoon (5 ml) dried basil
- Salt and pepper to taste
- 2 cups cooked white rice (370 g)
- 1 cup shredded moz zarella cheese (113 g)
- 1/2 cup grated Parmesan cheese (50 g)
- 1/4 cup chopped fresh parsley (15 g)
Instructions
- Preheat the oven to 375°F (190°C).
- Heat 2 tablespoons of olive oil in a large skillet over medium heat.
- Add the chopped onion and sauté for 3-4 minutes until softened.
- Stir in the minced garlic and cook for 1 minute until fragrant.
- Add the chopped red and green bell peppers to the skillet.
- Cook for 5 minutes until the peppers start to soften.
- Add the sliced zucchini and yellow squash to the skillet.
- Cook for another 5 minutes, stirring occasionally.
- Add the sliced mushrooms to the vegetable mixture.
- Cook for 3-4 minutes until the mushrooms are tender.
- Stir in the drained diced tomatoes.
- Add the dried oregano, dried basil, salt, and pepper.
- Mix well and cook for 2-3 minutes to combine flavors.
- Remove the skillet from heat and stir in the cooked white rice.
- Transfer the vegetable and rice mixture to a casserole dish.
- Sprinkle the shredded mozzarella cheese evenly over the top.
- Sprinkle the grated Parmesan cheese over the mozzarella.
- Bake in the preheated oven for 20-25 minutes until the cheese is melted and bubbly.
- Remove from the oven and let the casserole cool for a few minutes.
- Garnish with chopped fresh parsley before serving.
