Ingredients

  • 2 tablespoon s olive oil (30 ml)
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, chopped
  • 1 green bell pepper, chopped
  • 1 medium zucchini, sliced
  • 1 medium yellow squash, sliced
  • 1 cup mushrooms, sliced (75 g)
  • 1 can diced tomatoes, drained (14.5 oz / 411 g)
  • 1 teaspoon (5 ml) dried oregano
  • 1 teaspoon (5 ml) dried basil
  • Salt and pepper to taste
  • 2 cups cooked white rice (370 g)
  • 1 cup shredded moz zarella cheese (113 g)
  • 1/2 cup grated Parmesan cheese (50 g)
  • 1/4 cup chopped fresh parsley (15 g)


Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Heat 2 tablespoons of olive oil in a large skillet over medium heat.
  3. Add the chopped onion and sauté for 3-4 minutes until softened.
  4. Stir in the minced garlic and cook for 1 minute until fragrant.
  5. Add the chopped red and green bell peppers to the skillet.
  6. Cook for 5 minutes until the peppers start to soften.
  7. Add the sliced zucchini and yellow squash to the skillet.
  8. Cook for another 5 minutes, stirring occasionally.
  9. Add the sliced mushrooms to the vegetable mixture.
  10. Cook for 3-4 minutes until the mushrooms are tender.
  11. Stir in the drained diced tomatoes.
  12. Add the dried oregano, dried basil, salt, and pepper.
  13. Mix well and cook for 2-3 minutes to combine flavors.
  14. Remove the skillet from heat and stir in the cooked white rice.
  15. Transfer the vegetable and rice mixture to a casserole dish.
  16. Sprinkle the shredded mozzarella cheese evenly over the top.
  17. Sprinkle the grated Parmesan cheese over the mozzarella.
  18. Bake in the preheated oven for 20-25 minutes until the cheese is melted and bubbly.
  19. Remove from the oven and let the casserole cool for a few minutes.
  20. Garnish with chopped fresh parsley before serving.
