Ingredients
- 2 pounds new potatoes
- 3 tablespoons olive oil
- Salt to taste
- Pepper to taste
- Fresh rosemary or thyme (optional)
Instructions
- Preheat your oven to 425°F (220°C).
- Wash the new potatoes and cut them into halves or quarters, depending on size.
- Put the potatoes in a large pot and cover them with cold water. Add a pinch of salt.
- Bring the water to a boil and let the potatoes cook for about 10 minutes until they are just tender, but not fully cooked.
- Drain the potatoes and let them steam dry for a few minutes.
- In a large baking tray, combine the potatoes with olive oil, salt, and pepper. If using, add fresh herbs.
- Toss everything together until the potatoes are evenly coated.
- Roast in the preheated oven for 30-40 minutes, turning occasionally, until the potatoes are golden brown and crispy.
- Serve hot and enjoy!

Use fresh herbs for added flavor and consider using a metal baking tray for even crispiness. Avoid overcrowding the tray for best results.
