- 1 baguette (250g), thinly sliced
- 1/4 cup (60ml) vegetable oil
- 4 garlic cloves, minced
- kosher salt and pepper
- 1 pint (473ml) tomatoes, chopped
- 3 medium ripe peaches, diced
- 2 tablespoons (30ml) extra virgin olive oil
- 1/2 lemon, freshly squeezed
- 1 big handful fresh basil leaves, chiffonade cut or chopped
- 1 cup (240g) ricotta cheese
- balsamic glaze, for topping
Instructions
- Preheat your oven to 400°F. Alternatively, use a grill set to its highest temperature and cook for 1 to 2 minutes with the cover closed.
- Cut the baguette into slices about ½-inch thick. Mix half of the minced garlic with vegetable oil and a pinch of salt in a bowl. Spread this mixture onto the bread slices and arrange them on a baking tray.
- Place the bread in the oven and bake for 10 to 12 minutes, or until it becomes golden and crisp.
- Meanwhile, in a bowl, mix together the chopped tomatoes, diced peaches, and the rest of the garlic. Add a generous amount of salt and pepper. Pour in the extra virgin olive oil and lemon juice, then toss the ingredients. Allow them to sit while you prepare the ricotta.
- Blend the ricotta cheese in a food processor until it achieves a smooth, creamy texture. Move it to a separate bowl.
- Spread the creamy ricotta over each toasted bread slice.
- Mix the chiffonade-cut basil into the tomato and peach mixture. Add a spoonful or two of this mixture on top of the ricotta-covered bread slices. Optionally, drizzle with balsamic glaze before serving. Enjoy immediately.
