Ingredients

  • 1 baguette (250g), thinly sliced
  • 1/4 cup (60ml) vegetable oil
  • 4 garlic cloves, minced
  • kosher salt and pepper
  • 1 pint (473ml) tomatoes, chopped
  • 3 medium ripe peaches, diced
  • 2 tablespoons (30ml) extra virgin olive oil
  • 1/2 lemon, freshly squeezed
  • 1 big handful fresh basil leaves, chiffonade cut or chopped
  • 1 cup (240g) ricotta cheese
  • balsamic glaze, for topping


Instructions

  1. Preheat your oven to 400°F. Alternatively, use a grill set to its highest temperature and cook for 1 to 2 minutes with the cover closed.
  2. Cut the baguette into slices about ½-inch thick. Mix half of the minced garlic with vegetable oil and a pinch of salt in a bowl. Spread this mixture onto the bread slices and arrange them on a baking tray.
  3. Place the bread in the oven and bake for 10 to 12 minutes, or until it becomes golden and crisp.
  4. Meanwhile, in a bowl, mix together the chopped tomatoes, diced peaches, and the rest of the garlic. Add a generous amount of salt and pepper. Pour in the extra virgin olive oil and lemon juice, then toss the ingredients. Allow them to sit while you prepare the ricotta.
  5. Blend the ricotta cheese in a food processor until it achieves a smooth, creamy texture. Move it to a separate bowl.
  6. Spread the creamy ricotta over each toasted bread slice.
  7. Mix the chiffonade-cut basil into the tomato and peach mixture. Add a spoonful or two of this mixture on top of the ricotta-covered bread slices. Optionally, drizzle with balsamic glaze before serving. Enjoy immediately.
