  • 1 cup orzo pasta (200g)
  • 2 tablespoons olive oil (30ml)

  • 1 zucchini, diced
  • 1 cup cherry tomatoes, halved (150g)
  • 2 cups vegetable broth (480ml)
  • 1 teaspoon (5 ml) dried oregano
  • 1 teaspoon (5 ml) dried basil
  • Salt and pepper to taste
  • 1/4 cup grated alternative cheese (25g)
  • 2 tablespoons chopped fresh parsley (8g)


Instructions

  1. Heat 1 tablespoon of olive oil in a large skillet over medium heat.
  2. Add the diced onion and sauté until translucent, about 3-4 minutes.
  3. Stir in the minced garlic and cook for 30 seconds until fragrant.
  4. Add the diced red bell pepper and zucchini to the skillet.
  5. Cook the vegetables for about 5 minutes until they start to soften.
  6. Push the vegetables to the side of the skillet.
  7. Add the remaining tablespoon of olive oil and orzo pasta to the skillet.
  8. Toast the orzo for 2-3 minutes, stirring occasionally, until golden.
  9. Mix in the halved cherry tomatoes.
