Ingredients
- 1 cup orzo pasta (200g)
- 2 tablespoons olive oil (30ml)
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 red bell pepper, diced
- 1 zucchini, diced
- 1 cup cherry tomatoes, halved (150g)
- 2 cups vegetable broth (480ml)
- 1 teaspoon (5 ml) dried oregano
- 1 teaspoon (5 ml) dried basil
- Salt and pepper to taste
- 1/4 cup grated alternative cheese (25g)
- 2 tablespoons chopped fresh parsley (8g)
Instructions
- Heat 1 tablespoon of olive oil in a large skillet over medium heat.
- Add the diced onion and sauté until translucent, about 3-4 minutes.
- Stir in the minced garlic and cook for 30 seconds until fragrant.
- Add the diced red bell pepper and zucchini to the skillet.
- Cook the vegetables for about 5 minutes until they start to soften.
- Push the vegetables to the side of the skillet.
- Add the remaining tablespoon of olive oil and orzo pasta to the skillet.
- Toast the orzo for 2-3 minutes, stirring occasionally, until golden.
- Mix in the halved cherry tomatoes.
- Pour in the vegetable broth, stirring to combine all ingredients.
- Add the dried oregano, dried basil, salt, and pepper.
- Bring the mixture to a boil over high heat.
- Reduce the heat to low and cover the skillet.
- Simmer for 10-12 minutes, stirring occasionally, until orzo is tender.
- Remove the skillet from heat and stir in the grated Parmesan cheese.
- Sprinkle with chopped fresh parsley before serving.
