Delicious lemon shortbread bars featuring a buttery crust and a tangy lemon filling, perfect for any occasion.
Ingredients
- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 cup all-purpose flour
- 1 cup quick cooking oats
- 1/2 teaspoon salt
- 2 large eggs
- 1 cup lemon juice
- 1 cup granulated sugar (for filling)
- 1/4 cup all-purpose flour (for filling)
- 1 teaspoon baking powder
- Zest of 1 lemon
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking dish.
- Cream together the softened unsalted butter and granulated sugar in a bowl until light and fluffy.
- Combine the all-purpose flour, quick oats, and salt in another bowl, mixing until fully incorporated.
- Press half of this mixture into the bottom of the prepared dish for the crust.
- Whisk together in a separate bowl the eggs, lemon juice, sugar for filling, additional flour, baking powder, and lemon zest.
- Pour the lemon filling over the crust in the baking dish and smooth it out evenly.
- Crumble the remaining oat mixture on top of the filling.
- Bake in the preheated oven for 25-30 minutes or until golden brown.
- Cool completely before cutting into squares for serving.
Notes
For a stronger lemon flavor, increase the zest slightly. Dust with powdered sugar for added elegance before serving.
