Description

Delicious lemon shortbread bars featuring a buttery crust and a tangy lemon filling, perfect for any occasion.


Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 cup all-purpose flour
  • 1 cup quick cooking oats
  • 1/2 teaspoon salt
  • 2 large eggs
  • 1 cup lemon juice
  • 1 cup granulated sugar (for filling)
  • 1/4 cup all-purpose flour (for filling)
  • 1 teaspoon baking powder
  • Zest of 1 lemon


Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking dish.
  2. Cream together the softened unsalted butter and granulated sugar in a bowl until light and fluffy.
  3. Combine the all-purpose flour, quick oats, and salt in another bowl, mixing until fully incorporated.
  4. Press half of this mixture into the bottom of the prepared dish for the crust.
  5. Whisk together in a separate bowl the eggs, lemon juice, sugar for filling, additional flour, baking powder, and lemon zest.
  6. Pour the lemon filling over the crust in the baking dish and smooth it out evenly.
  7. Crumble the remaining oat mixture on top of the filling.
  8. Bake in the preheated oven for 25-30 minutes or until golden brown.
  9. Cool completely before cutting into squares for serving.

Notes

For a stronger lemon flavor, increase the zest slightly. Dust with powdered sugar for added elegance before serving.
