Grilled zucchini and squash are deliciously smoky, versatile, and healthy side dishes that elevate any meal during summer.
Ingredients
- 2 medium zucchinis, sliced
- 2 medium yellow squashes, sliced
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- Salt to taste
- Pepper to taste
- 1 teaspoon Italian seasoning (optional)
Instructions
- Preheat your grill to medium heat.
- Slice the zucchini and squash into approximately 1/4-inch thick rounds.
- In a large bowl, combine the sliced vegetables with olive oil, garlic powder, salt, pepper, and Italian seasoning (if using). Toss until the vegetables are well-coated.
- Arrange the zucchini and squash slices on the grill in a single layer.
- Grill for about 3-4 minutes on each side or until they are tender and have nice grill marks.
- Remove from the grill and serve warm as a side dish.
