Ingredients

  • 3 medium yellow squash (about 1180 ml very thinly sliced)
  • 1/2 cup (120 g) yellow cornmeal
  • 1/2 cup (60 g) breadcrumbs
  • 1/2 cup (45 g) powdered vegetarian cheese
  • 2 teaspoons (10 ml) cajun seasoning or all-purpose seasoning
  • oil for spraying


Instructions

  1. Heat your oven to 400°F. Lightly coat a large baking tray with oil spray and put it aside.
  2. Slice the squash very thinly and soak them in a bowl filled with water.
  3. In a separate bowl, thoroughly mix together the cornmeal, breadcrumbs, powdered cheese, and seasoning.
  4. Coat each squash slice in the mixture, ensuring they’re evenly covered, then arrange them in a single layer on the prepared baking tray.
  5. Bake for 15 minutes, then check if the slices are starting to brown and crisp. If they are, flip them over and continue baking for an additional 10-15 minutes until they become crispy. If not, bake for another 5-7 minutes and check again.
  6. Once both sides of the squash slices are crisp and the moisture has evaporated, take them out of the oven. Remember, the cooking duration may vary depending on the thickness of your squash slices.
