Delicious and nutritious banana bread protein muffins made with ripe bananas, oat flour, and protein powder, perfect for a quick breakfast or snack.
Ingredients
- 2 ripe bananas
- 1 cup oat flour
- 1/2 cup protein powder
- 1/4 cup honey or maple syrup
- 1/2 cup Greek yogurt
- 1/4 cup almond milk
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon vanilla extract
- 1/2 teaspoon cinnamon
- 1/4 cup chopped walnuts or chocolate chips (optional)
Instructions
- Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
- Mash the ripe bananas until smooth in a mixing bowl.
- Add oat flour, protein powder, honey or maple syrup, Greek yogurt, almond milk, baking soda, salt, vanilla extract, and cinnamon to the bowl.
- Mix all the ingredients together until just combined.
- Fold in chopped walnuts or chocolate chips if desired.
- Divide the batter evenly among the muffin cups.
- Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
- Let the muffins cool for a few minutes in the pan before transferring them to a wire rack.
Notes
Chill the muffins after baking to enhance moisture retention. Store them in an airtight container for up to five days, or freeze for later.
