Ingredients

  • 1 cup quinoa (185 g)
  • 2 medium beets, roasted and diced
  • 1 large orange, peeled and segmented
  • 4 oz feta cheese, crumbled (113 g)
  • 2 cups mixed greens (60 g)
  • 1/4 cup almonds, sliced (30 g)
  • 2 tablespoons olive oil (30 ml)
  • 1 tablespoon lemon juice (15 ml)
  • Salt to taste
  • Black pepper to taste


Instructions

  1. Rinse 1 cup of quinoa under cold water thoroughly to remove bitterness.
  2. In a medium saucepan, combine quinoa and 2 cups of water.
  3. Bring to a boil over medium-high heat.
  4. Reduce heat to low, cover, and simmer for about 15 minutes or until water is absorbed.
  5. Remove from heat and let quinoa sit covered for 5 minutes.
  6. Fluff quinoa with a fork and set aside to cool.
  7. In a large bowl, combine cooled quinoa and 2 cups of mixed greens.
  8. Add 2 medium roasted and diced beets to the bowl.
  9. Add the segmented pieces of 1 large orange.
  10. Sprinkle 4 oz of crumbled goat cheese over the mixture.
  11. Add 1/4 cup of sliced almonds on top.
  12. In a small bowl, whisk together 2 tablespoons of olive oil and 1 tablespoon of lemon juice.
  13. Season the dressing with salt and black pepper to taste.
  14. Pour the dressing over the quinoa mixture.
  15. Gently toss all ingredients to combine and coat evenly with the dressing.
  16. Serve immediately or chill in the refrigerator for later.
