Ingredients
- 1 cup quinoa (185 g)
- 2 medium beets, roasted and diced
- 1 large orange, peeled and segmented
- 4 oz feta cheese, crumbled (113 g)
- 2 cups mixed greens (60 g)
- 1/4 cup almonds, sliced (30 g)
- 2 tablespoons olive oil (30 ml)
- 1 tablespoon lemon juice (15 ml)
- Salt to taste
- Black pepper to taste
Instructions
- Rinse 1 cup of quinoa under cold water thoroughly to remove bitterness.
- In a medium saucepan, combine quinoa and 2 cups of water.
- Bring to a boil over medium-high heat.
- Reduce heat to low, cover, and simmer for about 15 minutes or until water is absorbed.
- Remove from heat and let quinoa sit covered for 5 minutes.
- Fluff quinoa with a fork and set aside to cool.
- In a large bowl, combine cooled quinoa and 2 cups of mixed greens.
- Add 2 medium roasted and diced beets to the bowl.
- Add the segmented pieces of 1 large orange.
- Sprinkle 4 oz of crumbled goat cheese over the mixture.
- Add 1/4 cup of sliced almonds on top.
- In a small bowl, whisk together 2 tablespoons of olive oil and 1 tablespoon of lemon juice.
- Season the dressing with salt and black pepper to taste.
- Pour the dressing over the quinoa mixture.
- Gently toss all ingredients to combine and coat evenly with the dressing.
- Serve immediately or chill in the refrigerator for later.
