Description

A comforting and healthy casserole featuring ground beef and tender zucchini, topped with melted cheese.


Ingredients

  • 1 lb ground beef
  • 2 medium zucchinis, sliced into half-moons
  • 1 cup shredded cheese (cheddar or mozzarella)
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tsp Italian seasoning
  • Salt and pepper to taste
  • Olive oil for sautéing


Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Heat olive oil in a large skillet over medium heat. Add the chopped onion and minced garlic, then sauté until soft.
  3. Add the ground beef to the skillet and season with salt, pepper, and Italian seasoning. Cook until browned.
  4. Stir in the sliced zucchini, cooking for an additional 5 minutes until slightly softened.
  5. Transfer the mixture to a greased casserole dish and sprinkle cheese on top.
  6. Bake for 20-25 minutes until the cheese is bubbly and golden.

Notes

For a lighter dish, use lean ground beef. You can mix in other vegetables like bell peppers or mushrooms for added flavor.
