Description

These beef taquitos are a delightful combination of seasoned beef wrapped in crispy tortillas, perfect for quick meals or gatherings.


Ingredients

  • 1 pound ground beef or shredded cooked beef (e.g., brisket or roast)
  • 1 small onion, finely diced
  • 2 cloves garlic, minced
  • 1 teaspoon chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon salt (adjust to taste)
  • 1/4 teaspoon black pepper
  • 1/2 cup tomato sauce or salsa
  • 1/2 cup shredded cheese (cheddar, Monterey Jack, or a Mexican blend)
  • 12 small corn tortillas
  • Vegetable oil for frying or cooking spray for baking
  • Toothpicks (optional, for holding taquitos together during cooking)


Instructions

  1. Heat a large skillet over medium heat and add vegetable oil.
  2. Sauté onions until softened, then add minced garlic and cook for an additional 30 seconds.
  3. Add ground or shredded beef, cooking until browned thoroughly.
  4. Stir in chili powder, cumin, smoked paprika, oregano, salt, and pepper, cooking for 1-2 minutes to bloom the spices.
  5. Mix in tomato sauce or salsa and allow it to simmer for 3-5 minutes until heated through.
  6. Remove from heat, add shredded cheese, and let the filling cool slightly.
  7. Warm tortillas to make them pliable; this prevents them from cracking while rolling.
  8. Place the beef filling into each tortilla, roll tightly, and secure with toothpicks if desired.
  9. Fry the taquitos in hot oil for 2-3 minutes per side or bake at 425°F for 15-20 minutes until golden brown.
  10. Serve immediately with your favorite toppings, such as guacamole, sour cream, and salsa.
