Ingredients

- 1 small onion, finely diced

- 1 teaspoon chili powder
- 1 teaspoon ground cumin
- 1 teaspoon smoked paprika
- 1/2 teaspoon dried oregano
- 1/2 teaspoon salt (adjust to taste)
- 1/4 teaspoon black pepper
- 1/2 cup tomato sauce or salsa
- 1/2 cup shredded cheese (cheddar, Monterey Jack, or a Mexican blend)
- 12 small corn tortillas
- Vegetable oil for frying or cooking spray for baking
- Toothpicks (optional, for holding taquitos together during cooking)
Instructions
- Heat a large skillet over medium heat and add vegetable oil.
- Sauté onions until softened, then add minced garlic and cook for an additional 30 seconds.
- Add ground or shredded beef, cooking until browned thoroughly.
- Stir in chili powder, cumin, smoked paprika, oregano, salt, and pepper, cooking for 1-2 minutes to bloom the spices.
- Mix in tomato sauce or salsa and allow it to simmer for 3-5 minutes until heated through.
- Remove from heat, add shredded cheese, and let the filling cool slightly.
- Warm tortillas to make them pliable; this prevents them from cracking while rolling.
- Place the beef filling into each tortilla, roll tightly, and secure with toothpicks if desired.
- Fry the taquitos in hot oil for 2-3 minutes per side or bake at 425°F for 15-20 minutes until golden brown.
