Description
A hearty dish featuring juicy meatballs in smoky barbecue sauce, served over roasted sweet potatoes and broccoli, topped with a creamy avocado goddess sauce.
Ingredients
- 1 lb ground sirloin or lean ground beef
- 1 tbsp Dijon mustard
- 1 tbsp Worcestershire sauce
- ½ tsp sea salt
- Freshly ground black pepper, to taste
- 1 large egg
- â…“ cup panko breadcrumbs
- 1 tbsp dried basil
- 2 tsp smoked paprika
- 1 tsp dried oregano
- 1 large garlic clove, minced
- â…” cup barbecue sauce
- 1 tbsp balsamic vinegar
- 1 tbsp tamari
- 3 tbsp water
- 4 medium sweet potatoes, peeled and diced into 1-inch cubes
- 1 bunch of broccoli, cut into medium florets
- 4 tbsp extra-virgin olive oil, divided
- Sea salt and pepper, to taste
- 1 ripe avocado
- ½ cup Greek yogurt
- Juice of 1 lime
- 1 garlic clove, minced
- ½ tsp sea salt
- Big handful of fresh herbs (basil and dill recommended)
Instructions
- In a mixing bowl, combine the ground sirloin, Dijon mustard, Worcestershire sauce, sea salt, black pepper, egg, panko breadcrumbs, dried basil, smoked paprika, dried oregano, and minced garlic. Mix gently to maintain a tender texture.
- Shape the mixture into 1-inch balls and place them on a prepared baking sheet, ensuring they have space between them.
- Bake for 20 minutes in the preheated oven until the meatballs turn golden brown and cook through.
- Combine diced sweet potatoes and broccoli in a large bowl. Drizzle with 2 tablespoons of olive oil, season with salt and pepper, and toss to coat.
- Roast the sweet potatoes and broccoli in the oven for 30 minutes or until tender and slightly caramelized. Toss halfway through.
- In a blender, combine avocado, Greek yogurt, lime juice, minced garlic, sea salt, and fresh herbs. Blend until smooth to create the avocado goddess sauce. Adjust seasoning as necessary.
- In a skillet over medium heat, warm the barbecue sauce until hot. Toss the cooked meatballs in the warm sauce until fully coated.
- Serve meatballs over rice, quinoa, or greens, topped with roasted vegetables and drizzled with avocado goddess sauce.
Notes
For meal prep, these meatballs freeze well. To prevent tough meatballs, avoid overmixing the meat mixture.
